Joy~Nostalg Hotel & Suites Manila recently launched the Nostalgia Lounge & Bar’s new a la carte and wine menus, providing its guests with more selection on food & beverages, and an improved dining experience. The Nostalgia Lounge & Bar is the hotel’s all-day dining restaurant offering buffet and a la carte dining, as well as bespoke cocktails, premium wines, and a wide selection of whiskies.
Joy~Nostalg Manila Executive Chef Edgar Alejandria said, “In general, the new a la carte menu includes international and Asian cuisine, but we wanted to highlight the local dishes to offer guests a journey to the Filipino culture.” The new menu includes the ultimate breakfast staples like tapa (dried cured beef) served with garlic rice and eggs, desserts like fried suman (glutinous rice cake) and turon a la mode (fried banana spring rolls), aligue pasta (seafood & crab roe fettuccini), and Pinoy favorites like pork ribs adobo, lechon kawali, chicken inasal, and sinigang na pata.
“One of my favorite dishes is the sinigang na pata and I’d like to introduce the dish to our foreign guests. I’ve tried a lot of recipes for the pork knuckles but sinigang has always been my favorite,” said Chef Edgar. Feeling nostalgic about his childhood years, Chef Edgar also recounts, “When I was a child, I would always go to the market with Nanay Atang, my grandmother, because I knew she would buy us suman with latik (caramelized coconut milk) for merienda. Chef Edgar added, “It’s one of my fondest memories enjoying food as a kid and it inspired me to include this rice cake recipe and some of my favorite local dishes in the menu.”
Concurrently, the food and beverage team launched the Nostalgia Lounge & Bar’s new wine menu, presenting a variety of champagne, white wine, and red wine from France, Italy, Australia, New Zealand, USA, Chile, and Spain. Joy~Nostalg Manila Food & Beverage Operations Manager Dunhill Salmo said, “The wine list we have this year is designed to complement the cozy and classic ambiance of Nostalgia, shortlisting the ones that we know will serve every palate and offer a great wine experience. Being a wine lover himself, our general manager, Antoine Weinstein, closely worked with the team to select the best ones to go in the list and categorize each variant by wine type, weight, and aroma.”
Apart from the new wine menu, the Nostalgia Lounge & Bar currently has separate menus for its regular cocktail selection and bar bites, Prohibition bar menu items inspired by the speakeasy era, and whisky collection that includes 101 different kinds of blended and single malt whisky from around the world.
